Recession, Depression, Black Friday....

Food - Left-over madness! If you haven't had enough turkey yet.... or you just want an easy way to prepare lunch, make a "Turkey Shepard's Pie." No recipe needed, just throw it together and whola! In a cake pan; put a layer of mashed potatoes, dressing, corn, and hunks of turkey topped with gravy. Put it in the oven and bake for 35-40 minutes or until heated throughout.

This year I bought way too many cranberries, but I love them, they are one of my favorite things to eat at Thanksgiving. What is your favorite Thanksgiving food? so I will eat them for a few days more. What is

Food - Food, Food, and more food. That is what yesterday was all about, after we offered up our thanks that is. Oh, my gosh! Is it possible to gain 5-10 lbs in 1 day? Because from the sounds of the groans being said around my house after the Thanksgiving Dinner (no, I didn't poison them) from being so full, I think everyone feels like they gained that much weight. But, that didn't stop us from delighting in the desserts though.

If you have any turkey left over, you can create a lot of fun dishes. Turkey pot pie, Turkey noodle soup, turkey sandwich, turkey omelet, turkey noodle hot dish, turkey nachos, turkey chili, turkey panni, shredded BBQ turkey, turkey and gravy over mashed potatoes, turkey enchiladas, cold turkey salad with grapes & pineapple, turkey Cesar salad, turkey Penna pasta....and the list goes on. Let me know what you use your left overs for.

Dish - "Who will stay and who will go?" at FM1071.FM. the Gabster is full of rumors, some confirmed by Jason Mathison himself. He has confirmed that he will be hosting a show with Alexis from 11-1, M-F, starting December 19Th., but no other details were given. Will it be Alexis Thompson, who is the producer for Kevyn Burger? My guess is yes. They make a good team and Alexis has the producer part down pat. Plus they are YOUNG! I think FM107 is looking for a younger host base to appeal to a younger listening audience.

But who will they replace, will it be Colleen Kruse or Stephanie? Who knows it could even be Kevyn? Here are the rumors: they will bump Colleen to 1-3 and Stephanie will go. They will bump Colleen all together. They will bump Colleen up to Kevyn's spot...
time will tell, but enquiring minds want to know. If CJ is the "Gossip Queen" around town why doesn't she tell us this stuff? Before we read it in the paper(and not in her column or before it is a well known bit of news),or it isn't "gossip!"

I for one, am not happy about Stephanie's show being cancelled. I like her show, she is well spoken, well versed, great researcher for topic items, and funny! But, it sounds like they are keeping her around to fill in and host sometimes. FM107 obviously sees her value or they wouldn't keep her around. I think people were harsh critiques of Stephanie when they let Meridith go, and blamed Stephanie. The listeners took it out on her and quit listening or bit**** about it.

Colleen is in desperate need of something. I have a hard time listening to her show, I have tried! Sorry, but it's the truth! I cannot believe they would let Stephanie go over Colleen! I think they should have let Colleen go, put on Jason and Princess Alexis and left Stephanie where she was!

Happy Thanksgiving

Food - Short of time, yet full of thankfullness today, we sprung out of bed and prepared our turkey to take it's journey into "bakedhood." Today is a day full of good food, and a sense of unity amongst family, if even just for one day, to "break a leg" together, so to speak. Our family hopes your family has a very blessed, thankful, Thanksgiving Day!

Dish - The only thing being dished today is the kind we will be dishing into our mouths, shortly.... It will be one day that we will try and refrain from all the "dish" going on in our world and just enjoy each others company.

Embellish - Be thankful for all that you have; the good, the bad and the ugly - it is yours - try and find the beauty in it all, just for one day!

Weebels wobble, but they don't fall down...Obama wiggles, but will he repeal Bush's tax cuts?

Food - Sometimes it is fun to make turkey, the unconventional way, on the grill! Hopefully it will not be too cold, or snowy outside.

Turkey on the Grill ~
Ingredients:
1 -10lb – 22 lb. Turkey (this will depend on the size grill you have and the number of guests you plan on serving.)
½ c. Olive Oil
Coarse ground or Sea Salt
Pepper

Injection sauce:
1/2 c. chicken broth
2 T. butter
1 T. lemon juice
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. finely ground pepper
salt to taste.

Melt butter in a small pan. Add remaining ingredients, except the salt. Mix well. Add salt until mixture has a slightly salty tastes. Allow to cool enough to work with and load into meat injector.

Prepare the turkey. Thaw turkey completely, wash and dry. Remove all the insides from the body cavity and the pop-up thermometer from the outside. Truss the turkey. Rub the outside of the turkey with olive oil and sprinkle the inside and outside of the turkey with course ground salt or sea salt and pepper. If you prefer more of a flavor you can use a seasoning of your choice. Inject the sauce into the turkey breast, thigh and legs (this is options, but adds extra moistness into the turkey.)

For added flavor: soak about 1 C. apple, hickory or mesquite flavored wood chips in a small amount of water for about 20 minutes, drain, and add to the hot briquettes or to your gas grill smoke box.

Prepare the grill. Make sure the grates are clean. If you are using a charcoal grill, place a drip pan in the center of the grill beneath the grate to catch drippings. If you are using a charcoal grill, we will be grilling with in-direct heat. Place charcoal briquettes that have already been started in a chimney starter in the right and left side baskets, leaving the center free. Since the turkey will be cooking for several hours we will need to replenish the briquettes periodically during cooking. Open the vents on the top of your grill and leave them open for the duration of grilling. Place the turkey in the center of the grill; cover. You will need to keep an eye on the turkey while it cooks, checking for flare ups (keep a spray bottle filled with water or apple juice next to the grill for flare ups) and to add more briquettes. Cook the turkey until the skin is nicely browned and the meat is thoroughly cooked, this can take anywhere from 2-5 hours depending upon the size of the turkey and heat of the grill. 10 lb. turkey will take approx. 2 ¼- 2 ¾, while a 22 pound could take up to 4-5 hours.

There is no need to cover the turkey with foil as it cooks. Simply lower the lid of the grill and baste every now and then. If it gets too hot, lift the lid and let it cool down a while. If it is not cooking fast enough, add more charcoal or turn up the heat. The delicious flavor of the turkey will be just reward for you and your guests.

Reduce the heat until the grill thermometer registers 350 degrees. Again, we will be using only one set of the burners to avoid burning the bottom of the turkey, while leaving the top uncooked. Place the turkey breast side up in the center of the grill; cook the turkey until the skin is nicely brown and the meat is cooked thoroughly, this can take anywhere from 2-5 hours depending upon the size of the turkey and heat of the grill. 10 lb. turkey will take approx. 2 ¼- 2 ¾, while a 22 pound could take up to 4-5 hours. Halfway through the cooking time, turn the turkey around to cook the other side evenly.

There is no need to cover the turkey with foil as it cooks. Simply lower the lid of the grill and baste every now and then. If it gets too hot, lift the lid and let it cool down a while. If it is not cooking fast enough, add more charcoal or turn up the heat. The delicious flavor of the turkey will be just reward for you and your guests.

Don’t over cook your turkey. Cook the turkey until the skin is nicely browned and the meat is thoroughly cooked. Cooking time varies upon the heat method and temperature. The internal temp of the turkey breast must reach 170 degrees before is tit removed from grill. Once it is done, remove it from grill and allow the turkey to rest, breast down for about 15-20 minutes before carving. This will allow all the juices to flow to the breast portion, making it juicy!

I'm not sure I fully understand the reason for a pardon, isn't the person guilty of the crime they committed, or is it just the President's right? If anyone can explain this to me, please do.

Listening to his press conference on Monday, it was easy for one’s mind to race back to an often-repeated line from an Obama campaign event. At each stop, he would ask those in his audience to raise their hand if they made less than $250,000, an exercise designed to show how many people favored the notion of repealing the Bush tax cuts for upper-income Americans.
At his first post-election press conference on Nov. 7, Mr. Obama demurred when asked whether he intended to raise taxes immediately on the wealthiest Americans by revoking those tax cuts. And on Monday, he offered a similar noncommittal reply.
“Whether that’s done through repeal or whether that’s done because the Bush tax cuts are not renewed is something that my economic team will be providing me a recommendation on,” Mr. Obama said. “But the basic principle is that we’re going to provide tax cuts to the vast majority of Americans.”
His supporters, who cheered wildly at his suggestion that he would immediately reverse the Bush administration’s tax cuts, may be disappointed to know that he has ratcheted down the oratory about the issue.
But doing so gives him, as one adviser explained, a bit of strategic room for Mr. Obama to wiggle now that he is the president-elect.

Deep Fried Turkey! Not I'm not talking about anyone at the CMA Awards.

Food - And preparing the Turkey....that is what we are all doing, if we are hosting the Thanksgiving Dinner.

Normally we have a traditional Thanksgiving Turkey Dinner, which includes the turkey baked in the oven with the stuffing, squash, etc.. Once in a while we have an extremely large group joining us, in our gathering of being thankful, then we have two turkeys. One in the cooked in the oven, the other... is deep fried. I know the words turkey and deep fried sound so wrong when said in the same sentence, but I assure you, it is not as unhealthy as it sounds, if you use peanut oil. This method of cooking is really quick, yet yields a really juicy turkey when done. But, you must be really careful! We have all seen the local news stations with disastrous footage tape of someone preparing a deep fried turkey and everything goes up in flames - so please take appropriate precautions! This is not an area for children!

Deep Fried Turkey
Ingredients:
1 turkey (about 14-16lbs.) *eye up the pot to see what size turkey would fit before purchasing.
4 gallons peanut oil
Thermometer
Gloves
Hook


Ingredients for Injecting the Turkey
1/2 c. chicken broth
2 tbs. butter
1 tbs. lemon juice
1/2 tsp. garlic powder
1/2 tsp. onion powder
salt to taste
Prepare the turkey. It needs to be defrosted, room temp., washed and thoroughly dried. Take out any of the pop-up timer devices or anything that is inside of the turkey. Truss the turkey. This is done by securing the legs, neck flap and wings to the tail of the body of the turkey.
Prepare the the ingredients for injecting the turkey by melting butter in a small pan, add remaining ingredients, except for the salt. Mix well. Add salt until the mixture has a salty flavor. Allow this to cool enough to work with and pour into the meat injector. Using a 20-30 cc syringe and 18 gauge needle. Be sure to inject evenly throughout turkey, injecting 5 inches apart. Be careful not to inject air into the turkey. Place in sealed plastic bag and refrigerate for up to 12 hours. For best results, inject turkey approximately 12 hours before deep frying. If you don't have enough time to let sit overnight or for 12 hours, you can inject the turkey prior to deep frying it.

*Remember, when you inject the turkey you don't want to use any ingredients that could get stuck in meat injector apparatus.

Determine the amount of peanut oil you are going to use by placing the turkey in the empty pot, add enough water to completely cover the turkey, plus an inch or two. There should still be enough room between the oil and the top of the pot, if not, you either need a bigger pot or a smaller turkey - sorry. Remove the turkey and measure the water. This is the amount of oil you will need. Make sure the pot is completely dry, any water left behind can cause problems once you add the oil and heat.

At this point make sure your "cooking area" is a large, open space and void of any flammable products or anything that could potentially catch fire. Add the oil to the pot and bring the temp up to approx. 400 degrees. (Hopefully you have invested in a good thermometer.)

Again, make sure the turkey is thoroughly dry! This will prevent some of the splattering caused by water hitting the hot oil. Turn off the burner while putting the turkey in. Slowly, lower the turkey into the HOT pot of peanut oil. It is going to splatter some, so you need cooking gloves and a hook to lower the turkey into the pot. A good way of preventing the oil to completely boil over the pot is, if you slowly lower the turkey part way, pull it back out, and repeat this step until it is safe to fully immerse the turkey in the peanut oil without it over flowing.

Once the turkey is fully immersed and resting in the oil, turn the burner back on and allow temperature to get to 350 degrees to properly cook. A turkey generally cooks at a rate of about 3-3 1/2 minutes per pound. While the turkey is cooking, I don't recommend walking away from it. This is a very dangerous cooking situation, especially when left unattended. A 15 lb. turkey should cook in about 45-50 minutes. Use your instant read thermometer to 175 degrees.

If done, turn off the burner and, slowly, remove the turkey from the oil and place on a cookie sheet; sprinkle both sides with salt and pepper, then allow it to cool, upside down for 15 minutes before serving. Carve and enjoy!

I thought Cold Play's lead singer: Chris Martin, seemed a bit like a little boy who had tons of energy that he didn't know what to do with, so he just jumped around, most of the time looking silly. I love Cold Play, but this was not one of their better performances.
Loved Pink, Rhianna, Pussy Cat Dolls, Natasha, Jonas, The Fray, Mirah Carey; oh yeah - Happy Birthday - again Miley Cyrus....how many times does a girl turn "sweet 16" on national TV...is this the 2nd or 3rd time? I can hardly wait till she turns 21.

I can see clearly now...if I can just vote right!

Food - Or the lack of these days, that is until the Thanksgiving Feast. Don't worry - we will not starve - I have managed to do the "daily" cooking such as homemade chili, etc.. Although what has gone to the side of the "chopping block" is the fun and creative dishes that I don't have time for right now. Soon, my dear, soon.

Remember the song; Sign, Sign, everywhere a sign? Well I have a song too, it's: "Piles, Piles, everywhere a pile." I like the other song a lot more! There is a stack of books that, if I don't quit buying more of, will soon resemble the height of Mount Everest; an ever mounting pile of mail, a growing collection of "previously viewed" and "new" DVDs waiting to be viewed by someone, and recently purchased groceries waiting to be concocted into either a tried and true recipe or a recipe created by moi and shared with all of you - lucky you!

These varied collections of piles, and there are probably more, are the end result of the massive paint job that I have undertaken. As you can tell from my above descriptions, I have still found some time in my daily brush and stroke life, to buy more sh** to add to these piles, that's the fun, and rather easy, part. It's the: "where do I put this?" question that becomes hard to answer, but inevitably "it" all ends up in the despicable "pile(s)." The task of sorting through these piles is another topic that will, no doubt, be a blog entry in the near future as I can see the bottom of the can and there is only one more to go.

I find myself singing the song: "I can see clearly now the rain is gone." But I replace those lyrics with something like: "I can see the bottom of the can now and only one more to go." My family, however, has begged me not to sing out-loud ever again, or sing about the bottom of a can (must be a personal issue going on here.) Use your inner voice they say. Okay, so I know I'm no Jennifer Hudson, Kelly Clarkson, or even Carrie Underwood for that matter, but, for those of you who know me - know - I have a song for everything and I have NEVER been able to use my inner voice! So, I guess they will just have to use ear plugs or... choose to sing along!


Dish - Recount wouldn't be necessary if it was done right the first time! Maybe, they weren't seeing clearly? Yeah, I know, you are saying I am living in a perfect world, and that mistakes will always happen. That much is true, I have made a few so no argument from me, but can we keep them to a minimum by voting right????

The Star Tribune and St. Paul Pioneer Press both showed examples of voters filling in one candidates name only to put a x mark in another. Here is a novel, but rather, genius idea that if you mistakenly fill in the wrong candidates name - leave the voters booth, get another ballet and do it correctly! Please, this will save us taxpayers a lot of money and the embarrassment of having to admit that we don't know how to vote, after all these years!

Are you kidding me?

Food - Shake, rattle, and roll. Bake, broil or boil.

I just like to rhyme,
sometimes, if you don't mind,
you will find,
I do it all the time,
you will say I owe you a dime,
for wasting your time,
but I hope you will think this is funny,

Here are the definitions to: Bake, broil or boil, as listed in Merriam Webster Dictionary. A couple of these definitions could describe the way some people look or their tempers....

Bake- transitive verb 1 : to cook (as food) by dry heat especially in an oven 2 : to dry or harden by subjecting to heat intransitive verb 1 : to prepare food by baking it 2 : to become baked 3 : to be or become extremely hot — bak·er noun

Out of all of these options, I think to "bake or baking" something maybe one of the easiest forms of cooking, other than microwaving something. Does the microwave even count as cooking? You usually just preheat the oven, put the food in and let'ter do its thing. Simple enough. I love to make baked potatoes, roast, and meat loaf. But my "true love" is to bake deserts.

What do you like to bake?

Broil - transitive verb : to cook by direct exposure to radiant heat : grill intransitive verb : to be subjected to great or oppressive heat

I very rarely use the broiler. It is one option you like to have "just in case" you want, or need, to. But, when you broil something it can really fill the room with smoke depending upon what you're cooking, or if you forgot to clean that dirty oven. Tuna melts were my first experience with the broiler.

What was your first broiling experience?

Boil - transitive verb1: to subject to the action of a boiling liquid 2: to heat to the boiling point 3: to form or separate (as sugar or salt) by boiling.

Boiling foods can be a little bit more laborious in the sense that you have to really keep an eye on it, but it's certainly no hard to do. The key to boiling is not to have the heat up too high that you either scorch the food, or it sticks to the bottom of the pan, or boils over all over the stove.

Dish - You know that episode of Charlie Brown where the rain cloud is right above him and wherever Charlie Brown goes, that rain cloud follows? That was vaguely how I felt this morning, although not quite so gray; and my cloud was of a more light fluffy texture, and a brighter shade of white.

I awoke this morning feeling lucky and filled with much hope that the journey I was about to embark upon would be met with much satisfaction as I walked out of Target with my Cities 97 CD in hand. My jubilant feelings were soon dampened (the cloud appeared) with the stark reality that they had run out of Cd's....with only 10 people left in front of me. "You have got to be kidding me!," were the words muttered by everyone in front of and behind me.

This was my first attempt at obtaining one of these Cd's, so maybe I was a bit naive, thinking that I could show up at 7:45 (it opened at 8:00am) and score one. The line wrapped around the building and as I meandered my way to the end of it, I could not resist the temptation of asking the question: what time did you get here? To which they replied: "6:00 am." Little did I know, that "Are you kidding me?", would be the phrase of choice on this particular morning. Maybe naivety wasn't the only culprit here, maybe it was shear laziness of not wanting to get my a## out of bed. As I stated, the store opened at 8:00am and by the time they had ran out, it was 8:05 am. This is the point where it gets a little ugly; now, it is not so much about the charity or the CD anymore as it is about getting my hands on one of them darn things. So, I head off to another Target. I walk through the doors, this time a wee bit leery that I will "score a CD," but still filled with hope.

Nope, Nada, Zilch, Nothing! "Are you kidding me?"
I then do what Target hopes I, and everyone else, will do: shop! Certainly there must be something I can buy - and there is. Next, I do what any normal Java-Junkie does, I proceed to the nearest Starbucks to jack myself up with my daily required caffeine, which happens to be inside of the Target, how convenient for me. There is no "Are you kidding me" this time (don't worry there will be at least one more) - my cup renneth over with a warm legal stimulant! As I sit and sip on this luxury I thoroughly enjoy so much; I listen to all the customers as they discuss if they were able to buy a CD or not, and the clerk reply back with the same story; with the fact that this year they got more Cd's than last year and how much longer the line was compared to previous years. He also stated that this might have something to do with the fact that it is the 20th anniversary CD.

Anyhow, the next person in line is when "it" happens. She states loudly that she didn't even know what the fuss was about, nor did she even know what the Cities 97 CD was, but thought she had better buy 2 of them...just in case. "Are you kidding me?, (told you there would be at least one more.) At this point it was like she had won the lottery in my eyes. Call it dumb luck, call it being in the right place at the right time, call it the early bird gets to chirp first. My husband has a theory: "That luck favors a prepared mind - can I get some help here then. Cuz, I thought I had prepared my mind to be "lucky." I sent out the vibes, I pictured it on my "secret" board in my mind, I even felt it in my bones...I guess this old dog needs to learn a few new tricks. I promise to be the obedient participant, if anyone wants to be the trainer. But as for me, right now, I really don't care anymore - I am just going to sit here, drink my coffee, enjoy the journey and plan my strategy for next year.

They say there is a lesson in everything; don't you just hate those damn lessons? I say: "Lessons, scha-messons, 'I want, what I want, when I want it'!"

Dawn says: "there is always a silver lining too, actually there were a few of them." One lies in the fact that this CD is the catalyst for a great charity, and it provides a vehicle to obtain needed funds. Some of the others are that I am able to: a). wake up (thank God I'm not dead yet), b). that I am able to stand in line and wait (there are many people who can't), c). that I have the money to buy the CD (there are many that don't), d). that I am able to see the silver lining(s) shimmering right in front of my eyes, e). that I am grateful for the journey! No more "Are you kidding Me's" just me and my friend, hope, heading out on our next adventure. And if our paths do cross again in the future, we will remember this past endeavor with a fondness for having had it.

8 Year Old Interrogated!

Food - Are we drawn to food strictly by the color of it? I think we are; what else can be attributed to the "see food diet" that so many of us are on? Studies show that early civilations, such as the Romans, recogonized that people "eat with their eyes as well as their palettes." There are many people that will not eat any foods that are green. I personally don't like anything blue. And yet contrarily to my distaste for blue food, many marketing studies show that vibrant colors like: red, yellow, white, and blue are the best colors to use on food labels - go figuire.

What does blue have to do with food? And wanting to eat it? Maybe nothing more than, what the definition of blue tells us: that blue is calming. It can be strong and steadfast or light and friendly. Almost everyone likes some shade of the color blue. It is a natural color, from the blue of the sky, blue is a universal color. The cool, calming effect of blue makes time pass more quickly and it can help you sleep (hopefully not while your shopping). Blue is also a good color for bedrooms. Dish - "8 year old boy methodically shot his father and another man shot each victim at least four times with a .22-caliber rifle, methodically stopping and reloading as he killed them, prosecutors said Monday."

Quite a few things about this story upset me, aside from the obvious reason that two people have been murdered, the most glaring of which: something is fishily wrong here! This 8 year old boy was not arrested, or taken into custody right away, rather he was said to have been a "witness."

Where did this all go awry? How did he now become a suspect? They say, "This 8 year old boy methodically killed the renter that lived with them and his father, shooting both of them up to 4 times each." While it is a known fact that the father had taught this 8 year old boy how to shoot a rifle for Pheasant hunting purposes. Well, he undeniably had a good teacher to have been able to shot 2 people, 4 times each - killing them both!

Which raises a few questions in my mind: first, isn't 8 years old a little young to be going hunting with a rifle? Secondly, how many shots were fired, did he miss at all or was he "the" perfect shooter? Thirdly, where was his Mother or Grandmother when this boy was being questioned? Some say the reason they did not need to have a lawyer or anyone present during the "questioning", if that's what you call it, was due to the fact that he was brought in as a "witness" not a suspect.One thing I know for sure is if this was my son, or relation of any kind, there would be no way in he** he would go anywhere, much less alone, with anyone after such an event as this took place!

Details released in the video of the 8 year old being questioned by the Police are rumored to have been done without: his rights being read to him, without parental accompaniment, and without the presence of a lawyer. And from where I sit, it appears as though this boy is being coached/forced into admitting something that he may not have done. As I watched the interrogation, I found myself feeling sorry for this young boy - my heart was breaking! We have all seen adults break and admit to crimes they didn't do, but now we are dealing with an 8 year old! I went from having a broken heart to a rage that began mounting with each questioned asked. And the thoughts: "shame on you! for taking advantage of a scared, defenseless little boy like this - you should know better!", echoed in my mind over and over with each question or beguilement.

Here is the scenario I have come up with: could it be that the father and the renter had entered into a dispute and a fight ensued, leaving the renter dead and the father severely injured and with all the might he could muster in his last dying breath, the father pleaded with his child to end his misery by shooting him? Without all the facts being known, it is any one's guess as to what really happened. But, something deep-down inside of me tells me that this boy didn't do what he is being accused of. ...Or maybe, just maybe, I cannot even fathom the fact that a child could commit such a heinous crime such as this, therefore, I am in denial. He is innocent until proven guilty; after all.

My gut feelings has served me well in the past, I hope that my gut is not on a diet now! You watch the video and be the "judge."

Barbecuing isn't just for summer anymore! Join the "Bee-hiving" phenomena...

Food -Barbecuing isn't just for summer anymore! Studies show that nearly 70% of gas grill owners grill out - all year round. While it is true that the largest grilling holiday of the year is: July 4Th., the rising interest in healthy eating has "heated up;" grilling all year round, making it much more popular. So popular, that it is now a phenomena that has been dubbed: "Bee-hiving" - enjoying the great outdoors!

Undeniably, it is much hard to grill in the cooler winter weather, especially as the snow starts to mount on the deck or patio. There are details such as: a path to the grill that needs to be kept clear; a jacket, boots, and hat that need to be slipped on prior to braving the cold, blustery weather, but it is well worth it in the end.

Another way in which people are grilling all year round is done right in the warmth of their own kitchen, in your PJ's if you want to. While you won't be able to capture the same flavor as that of an outdoor charcoal grill, you can still achieve the look, and add some versatility to your "winter" menu. There are several types of apparatuses you can use for grilling indoors.

Electric (contact) Indoor Grill: this looks similar to a panini maker. It cooks food on both sides simultaneously, requiring less attention from the cook. The electric grill also gives a more consistent heat and a larger cooking surface than other indoor grills. If purchasing one of these, your best options is to get one with the hinges that adjust to different heights, not all of them do.

Indoor Grill: This type comes in a couple different versions. One is a rectangular grill pan that has grill/slots that you can use on a gas stove; the other is a granite grilling stone that withstands higher temperatures to grill meat, seafood and vegetables on. When cooking on the granite grilling stone, do not use oil or fat! The later version also comes in an electric version with dishes to melt cheese. Again, do not use oil or fat on this!

Stove Top Panini Press: this is a grill pan with a heavy cast iron press. Much like the stove top grill pan, listed below, this press takes turns the heat up a notch by adding the cast iron press to achieve the grill marks, loved by so many grillers.

Stove Top Grill Pan - a glorified version of a fry pan. They come with a non-stick pan with slotting for the grilling effect. This works great when you don't want, or have, room for a larger indoor grill. It is great for grilling fish, vegetables, or single servings of food.
The one I prefer depends on the mood I am in, what I am cooking and the size group I am cooking for. A griller needs options, so pick up a few different kinds and Grill on!

60 Minutes ~ The Obamas!

Food - Not too sure if Thanksgiving Day is a good time to test out a new recipe for stuffing? Here's your chance to do it now. I have developed this recipe to my liking, but that is the great thing about food - you can make it how you like it! Tweak this recipe by adding spicy sausage instead of sweet Italian; add more celery or onion if you like...."stuff it" any way you want to, I dare you!

Cranberry Sausage Pecan Stuffing
Ingredients:
1 1/2 lb pound sweet Italian sausage (to spice it up, use hot)
4 tbls unsalted butter
2 1/2 c. boiling water
2 c. dried cranberries
2 ribs of celery, finely chopped
1 lg onion, chopped
One 1lb. bag herb stuffing mix
One 1lb. bag corn bread stuffing mix
2 cloves garlic, finely chopped
1/2 c. flat-leaf parsley leaves, chopped.
1 cup toasted pecan pieces
2 lg. eggs
4 c. chicken broth
1 tsp sea salt
1 tsp freshly found pepper
1 1/2 tsp sage

In a medium bowl, pour the boiling water over the cranberries and let soak for 30 minutes. Preheat oven to 350.
In a large skillet, melt butter over medium heat. Add sausage, stir to chop up sausage, add celery, garlic, sage, salt, pepper and onions; cook until vegetables are tender and meat is browned, about 8-10 minutes. Remove from heat and transfer to a bowl; let cool.
In a large bowl combine the stuffing mixes with the parsley, pecans, cranberries and the water they were soaked in. In a med. bowl, beat the eggs with the chicken broth and pour over the stuffing mixture; stir. Add meat mixture and stir thoroughly. Spoon the completed stuffing into 2 greased medium casserole dishes; cover and bake for approx. 40 minutes.

Dish - The most viewed episode of 60 minutes ~ THE OBAMAS! He states in his own words: "We have a lot to do."
That, my friend, is no understatement. He is right - we do. But, I truly believe he is ready, and well suited, for the job. Plus, it can't get much worse, it can only get better, right? He will no doubt surround himself with the proper people to help him do just that; one needs to look no further for validity than to who he chose for his partner in life, his wife, Michelle Obama.
A couple things became evident from watching this episode of 60 Minutes. One: Michelle Obama is a force to be reckoned with, she will no doubt be his closest advisor. Although she has stated on many occasions that her main focus will lie in the rearing of their children, make no mistake about it she is the driving force behind this machine. Two: Barack Obama respects women! The love and kindness he shows towards his wife and his two daughters resonates to the equality we strive to gain in this country. Plus he seems to have a great sense of humor something I, myself, admire in a man.
They will make a wonderful "First Family!"

Going on a "Silver haired fox hunt?"

Food - A small dusting of freshly fallen pure white snow covered the ground early this morning. For everything, turn, turn, turn, there is a season. Freshly fallen snow inspires us to get ready for the holidays, much like freshly painted walls can renew the peace we feel in our "homes."

Thanksgiving resembles that small dusting of freshly fallen pure white snow for many of us. It is a time, well, to give thanks. A time of gathering around the table with our families, friends, and neighbors, not merely just to feast, but to reflect upon our blessings; renew our hearts and minds - giving our spirits a "refueling" of hope for the days that lie ahead.

We have a tradition at Thanksgiving, I'm sure similar to many families, in that we go around the table and say what we are most thankful for. Most of the answers are fairly similar. Then right before partaking in the feast, we offer up our prayer of thanks. As thankful as we are, we quickly move onto the rather "lighter version of giving thanks, the child's version of giving thanks, simply known in our home as "Dwayne's Prayer." Our oldest son, when asked to say the dinner prayer simply cut to the heart of the matter and said: "Dwayne's Prayer." This prayer captures the innocence in giving thanks - it doesn't have to be a poetic, long, word filled prayer - it needs only come from the heart! It also reminds our family, and I hope it will yours too, to laugh, have fun, and enjoy the journey!

Here is a vegetable dish to bring "warmth" to any Thanksgiving dinner. I love this dish!
Roasted Root Vegetables with Sage and Garlic
Serves 4-6
Ingredients:
8 oz. rutabagas, peeled and cut into 1/2" cubes.
8 oz. turnips, peeled and cut into 1/2" cubes
8 oz. carrots, peeled and cut into 1/2" cubes or rounds
8 oz parsnips, peeled and cut into 1/2" cubes or rounds
1 lg. onion, cut or sliced into large pieces
8 fresh sage leaves
4 garlic cloves (do not peel)
Coarse salt and freshly ground pepper
4 1/2 tsp. olive oil

Preheat oven to 375. Toss together all ingredients and spread out in a roasting pan or on a baking sheet. Roast, stirring occasionally, until golden brown and tender. About 50-60 minutes.
*You can prepare this earlier in the day and put in a large casserole/serving dish.

I have also made this when preparing a roast too, by simply putting all of the above items in the bottom of the roasting pan and putting the roast directly on the vegetables!

Dish - Petters Co.: Many watchers, but no one watching..
I say: Petters Co: - Many people watching, they were just pretending not to see! How could you not see this? It was as big as an elephant in a small, cramped room and as tall as a giraffe poking it's head out of a Volkswagen. It was, as our Mom would say: as plain as the nose on our face. What amazes me most is, the amount of people so willing to go along with Tom Petters on this "scheme." It is one thing, when one person decides to do something unlawful, but when they recruit other people, and those people think: "Hey, sign me up, that sounds like a good thing to do." Come'on, they knew it was wrong from the beginning!

Fergie and the perfect 15lbs!

Food - Do you know someone who is not real adventurous with food? I do. They are the kind of people who know what they like, and don't like, and they won't try anything new; I feel sorry for those people, they're really missing out on some great food!

I always assume (I know) that these people must have really bland taste buds, but the funny part in all of this is, these same people find their adventure, not in food they eat, but in other items like, they have to have flavored cream (i.e. french vanilla) in their coffee, they use apple, orange or french vanilla tooth paste, they put flavored salt for on their popcorn, or by they add lemon to their soda pop.

Well, for those people, here is a rather unadventurous, but good recipe. One that was served up by the Lunch Lady of District 281.

Ground Beef and Vegetables in Gravy
Yield: about 4 C.
Ingredients:
1 lb. ground beef
1 tbsp. dehydrated onion
or 1/4 c. chopped fresh onion
1/2 tsp. salt
1/8 tsp. pepper
1 c. finely chopped celery
1 c. finely chopped carrot
1 tsp. (1 cube) chicken bouillon
1 tsp. (1 cube) beef bouillon
1 c. hot water
2 tbsp. flour
1/4 c. water.

Instructions:

In a large skillet, brown ground beef, onion, salt and pepper.

Finely chop carrots and celery and add to the browned beef mixture.

In 1 c. hot water, dissolve the chicken and beef bouillon and add it to the meat and vegetable mixture and simmer until vegetables are tender.

Add to the meat mixture.

Combine 2 tbsp. flour and 1/4 c. mixture of flour and water, stir until smooth.


Add to meat mixture and stir till thickened.

Serve over mashed potatoes, steamed rice, boiled noodles or bread.

Did Sarah Palin pay the "Piper?" If so, how much?

Food - Some people can eat the same food every day of the week and never grow tired of it, I am not one of those people. However, they are also the same people, who grow tired of going out to eat, and long for a "home cooked" meal. Once again, I am not one of those people. "They" are usually not the ones in charge of planning and cooking the daily meals though either. How can you grow tired of going out to eat? You eat 3 meals a day, you can have the best of both worlds by having home cooked for one or two of the meals and go out to eat for the other. Plus, there are so many choices of great restaurants to eat at, that one could never possibly grow tired of it - it's a smorgasbord out there I tell ya!

Dish - Did Sarah Palin pay the "Piper"....to lick her brother's hair into place? Surely, no amount of money could have been paid to capture that moment, it will be etched in our minds and tug at our heart strings, forever - how cute is that!

But since that "cute" moment, things have changed drastically and in many ways Sarah Palin is paying the piper in her political world. There she was a Governor in the "Great State of Alaska" when she was thrust, literally fed to the wolves, into the spotlight of one of thee most watched and highly publicized political races, in recent history. She began the journey with much buoyancy and firmness of purpose, that some may have equated with pure naivety. She legitimately had her fair share of followers that truly believed, and still do, that she was in fact very capable of preforming the task at hand and is what some consider: a breath of fresh air.

But in the end, after it was all said and done and a winner was declared, that is when she, Sarah Palin, started to vent some of the frustration and bitter dis-taste for the comments that had been made by the media, the nah sayers, and her opponents. She felt the need to strike out and try to extricate herself from the rumors that loomed, about her 150,000 wardrobe, not knowing that Africa is a continent, about the participants in NAFTA, and 2012.

Katie Couric's advice to Sarah Palin is, what most people wish would happen, to go away for a while, sit and read some books, let the dust settle, and resurface somewhere down the line. But, being the "Maverick" that she is, I have a feeling she will continue to keep her place in the "spotlight" this time, much by choice, either to set the record straight or to "ride the wave" and try to make the best of a bad situation. Hey you have to give her some credit, she has the likes of: Hugh Hefner & Marc Cherry calling for her.

"Every rose has it's thorn, just like every night has it's dawn." I surmise, she will wait patiently for her "dawn."

I watched the CMA awards last night and while I have never been a huge fan of country music, I must say, it has really changed! There's not so much of that country twang in their voices and it's not quite as depressing as it used to be. As a matter of fact the line that defines the genres is getting thinner and thinner. There were songs that verged into the rock genre, they even had a little bit of pop mixed in.

One reason I love to watch the CMA, Grammy Awards, etc.., aside from listening to all the talented performers perform, is to see what everyone is wearing, who's thin, and who's hot. There was Sugarland (hot), Miley Cyrus (who was in need of a new wardrobe), Keith Urban (hot), George Strait (as smooth as a freshly shaved face), Kenny Chesney (hot), Kid Rock (not your typical hottie, but somehow exudes sexy into the air), and even "Joe the Strummer" was in the house!

Out of all the performances, Kid Rock & Carrie Underwood brought down the house. Who doesn't love listening to him perform "all summer long?" Carrie Underwood sang; "Just a Dream." Man can she belt out a tune!

I did make one "note to self" just in case I ever become a performer: don't stand with your legs wider than your shoulders and push your pelvic bone out, like a few of the female performers did. It's really not that attractive, it's almost as bad as a camel toe walking towards you, almost I said.

Wicked Nasty!

Food - I admit that sometimes I lose focus and I wonder if I don't have a titch of ADHD. Oh look, there's a chicken! I often pride myself on being a great multi-tasker with an exorbitant amount of energy--but I have to admit I have hit a wall -- well several walls to be exact. I have taken on the project of painting the entire inside of our home, this is a job that I have had to "talk" myself into doing, rather than hiring it out. I knew it was a huge task, but one doesn't realize how many walls confine us until you start painting them.

As the paint roller is gliding up and down the wall, making the W sign, I have a lot of: creative, colorful, thoughts going on in my mind. Thoughts of chocolate, what the Thanksgiving meal will look like, how will I set the table, Christmas cookies, Christmas dinner and Culinary School. What, Culinary school? There goes that ADHD kicking in again. But my thoughts are not as random as they may seem to you, they do make sense to me. They have to, I have to live with myself, remember? What better time to be a "Culinary Artist" than at the holidays! I think every woman at some point in her life dreams of going to Culinary School, and if you are like my friends and me, it's not that we want to slave over a hot stove so badly as we just want to be able to create great food, learn good techniques and have the confidence that the proper training affords you.

My absence of blogging these last few days has reassured me that I do have focus. I am feverishly working on getting this project done, so I work part of the day painting and the other part I spend working on http://www.big-jakes.com/. I have become obsessed, but you already knew that. This schedule leaves little time for cooking, blogging or cleaning the house.
Here I go writing this blog entry as though someone actually reads it, when in fact, no one does - just me, over and over again. It is more of a vehicle for me to express myself. A release, a sort of therapy, if you will. And if by my sending these messages out into the "cosmic void," someone actually does take the time to read them, thank you!
Dish - As I was painting the "W" on my walls, the other "W" did come to mind. And I couldn't help but wonder what these last few days have been like for President and Mrs. Bush. The reality that we will soon have a new President is welcomed and exciting news for all of us; just as the departure from the White House for the Bushs' is probably something they are anxiously awaiting, wouldn't you? But, a sense of sadness did come over me as I watched him give his "passing on the baton" speech the other day. Here is a man, and his family, that for the last 8 years has devoted their life to the task of leading our County. Arguments to the quality of the job preformed will no doubt transcend down through the years, thus making history. But all arguments aside, the task of leading our Country is an enormous task; one that not many of us are qualified, nor would want to do. But here is a man, like so many before him, that have pledged not only his live, but the live of his family to do just that. For that we do owe some respect.
Will he have some regrets? Sure. Some of these regrets may haunt him, and us for an eternity, but hopefully in the end they will also be the a great teacher for Presidents to come. Here are a few of the regrets he regrets saying.

T.G.I.F.

Food - "They" say you should eat breakfast; that it is the most important meal of the day. While I don't disagree with that statement, I have always preached it to my children (do as I say, not as I do,) I have never been one to "eat" breakfast. I am usually not hungry right away, I have to work up an appetite. Plus, I need my java first thing in the morning. After my morning jolt, then I can eat, but it has to be something light; fresh fruit with yogurt or yogurt and granola, otherwise I will fall asleep! That's why like to have "breakfast" for dinner. Here is a great recipe for French toast.

Corn Flake Crusted French Toast
Ingredients:
1 loaf brioche bread (about 1 lb)
1/3 c half and half
2 tsp. Sugar1 tsp ground cinnamon
1/4 tsp fine salt
1/4 tsp orange zest
4 eggs, lightly beaten
2 cups corn flakes, coarsely crushed
6 tbsp unsalted butter
Confectioners' sugar
Maple syrup

Slice brioche loaf into 1"-thick slices with a serrated knife. Using a 3" round cookie cutter, cut each slice into a circle and set aside. (Reserve bread scraps for bread crumbs.)
In a shallow dish, whisk together half and half, sugar cinnamon, salt, orange zest, and eggs. Put corn flakes into another shallow dish.
Working 1 circle of brioche at a time, dip in the egg mixture, allowing brioche to soak for 10 seconds on each side, then coat in the corn flakes. Transfer to a sheet tray lined with waxed paper.
Heat ( 3 tbsp of the butter in a 10" non stick skillet over medium until just foaming. Transfer 4 slices of brioche to the pan and cook, turning once, until both sides are golden brown, about 4 minutes.
Divide the french toast between 2 serving plates. Wipe out skillet, add remaining butter, and repeat process. Dust the french toast with confectioners' sugar and drizzle with maple syrup. Serve with berries and sliced fruit, if you like.

After hearing her speak you are amazed that someone who is that soft spoken could possibly run a multi-million, maybe billion, dollar company. She is soft spoken, yet fiercly focused to lead. Not just lead, she wants to lead with purpose of the greater good. It was an honor to hear her speak and it restored my faith in business'.

Change is a coming

Food - There's gold in them there antique stores....I was out and about the other day, when I happened upon an antique store. I went in and looked around for any "good find" that could be found. When guess to my wondering eyes should appear? No, it wasn't a miniature sleigh and eight tinny reindeer. However, it felt like Christmas to me. It was a copy of "Mom's School Lunch Recipes, from District 281."

If you have read any of my blog, you will know I recently did a blog entry on school lunch. I had to phone my mom, a former head cook in District 281, to get a recipe for that blog. Now, I have a copy of my own! Mom, don't worry, I will still call you - cuz I love ya man!
Barbecued Hamburger (sloppy joes)
Yield:6 servings - 1/4 c. servings
Ingredients:
1 lb. ground beef
1 1/2 tsp. lemon juice
2 tsp. vinegar
1 1/2 tbsp. water
2/3 c. catsup
1 tbsp. brown sugar
1 tbsp. dehydrated onion
1 tsp. dry mustard
1 tsp. salt
1/8 tsp. pepper
Brown ground beef, add remaining ingredients and let simmer for 15-20 minutes. Spoon onto 6 buns.
Dish - The election is over and a new website has been launched for the "President Elect, Barack Obama" justly named: change.gov., since that is the whole premises of things to come. Go to the website and check out all of the key issues and his plan of action, and if you are out of a job, they are looking for applicants too!

I, myself, cannot stop comparing: JFK, Clinton and Obama. They are all Democrats (I won't get into policy issues now), speak eloquently, captivate the audience, are young, good looking men married to strong women, and have an undying love for their children.

Barack Obama is President Elect - The thing about winning...


Food - Have you ever made Butter Croissants from scratch? I tried. I bought another cookbook and it had a recipe for them, so I thought, heck I will make them and take pictures as I go to show you. I took pictures through the whole process, and it is laborious process, even the end result. The end result didn't end to well though - so no pictures, unless you insist. 5-6 hours later, I now know why people buy them. I just really wanted to try making them, and I'm glad I did. Who knows, I may just try making them again...I don't like defeat either! If you have any tips for my next try, or a defeat story of your own, share with me.

Dish - 22 months later and we have a winner - congratulations President Barack Obama! First African American, ever elected President of the United States of America! History has been made. T here is no doubt that you will surround yourself with the right people to serve our Country well. God Bless you and your family in the days and years that lie ahead.

The thing about winning is, someone always has to lose. No one likes to lose! I think we have all felt the agony of defeat (I'm sure De-feet hurt too, 22 months of grueling campaigning) and it doesn't feel to good. We can all relate to that feeling, the feeling that John McCain must have felt, and will continue to feel in the days and weeks ahead, as the last vote was tallied...in the wee hours of the night. Or can we? Can we relate to the magnitude of this lose? Does it matter the size of the lose, or is a lose a lose, none the less?

John McCain's concession speech was humble, noble and and eloquently. He claimed that the fault was all his, not the peoples. Although, I can't help but wonder is John McCain, deep down in a place where he doesn't want to think about, really cursing the very system that didn't elect him President?

If he is anything like the rest of the human race, he will start to question the lose, with these questions:
Why didn't I win?
How come he won and I couldn't?
Did he need it more than me?
Why do they like him more?
Did I have what it takes to be President?
Am I too old?
Was I not good looking enough to win? (I can see where the young people voted for Obama, let's face it, who would a young person want to elect: a young hip 47 year old, who speaks fluently - or - a 72 year old man with gray hair?)
Did I pick the wrong time to run?
Did I pick the wrong running mate?
What did I do wrong?


Now, I know you will vehemently deny ever asking yourself those questions when you have lost something, but I have, it's only human (I didn't say productive), and so will he.

Soon, those thoughts must give way to these thoughts for sure survival.
He must have needed it more.
It just wasn't meant to be.
Something better is in store for me.
When one door closes, another one opens.
Every path leads to some other opportunity.

Notice I didn't mention Sarah Palin? I'm sure she is hugely disappointed too, but she has a bright future ahead of her. She will go back to Wissilla, Alaska., and prepare herself for 2012!

Food - Prime aged beef. That is what we had for dinner Sunday night, along with grilled asparagus and a baked potato. It was another gorgeous day out, 67 degrees in Minnesota, and a fine day to grill. We bought some prime aged steaks and used: DUB'S RUBS, "A Cut Above" Seasoning on them before grilling.


Dish - Speaking of prime, I feel as though I have entered "My Prime." Here are things I like about aging, aside from getting married and having a family.

I like:
  • Who I am.
  • Peace of mind.
  • Not being afraid to try things I would have been afraid to try before.
  • Confidence.
  • Healthy self-esteem.
  • Wisdom.
  • Having a zest for life.
  • Knowing what I want, and not being afraid to ask for it.
  • Being a sponge and soaking up everything.
  • Not hearing my mom say: "stand up straight." It paid off, I must say, I have good posture.
  • Knowing life is a journey and enjoying the ride.
  • Having less angst over small things.
  • Knowing that I don't have to like everyone, but I do have to respect them.
  • Not having to be all things to all people.
  • Not having to have a spotless house. Do you really need to eat off the floor?
  • Sex. (I said, aging.)
  • Seeing the beauty in everyone.
  • Wanting to be the best that I can be.
  • Religion.
  • Wanting to vote. (Please vote today!)
  • Watching CNN, Food Network, Good Morning America, etc..... and talking about the issues with friends.
  • Being better off financially.
  • Knowing that no matter what, I will survive.
  • Having a lot of black outfits to look slimming in.

Things I miss most:

  • Sleep, sleep, sleep.
  • Having a spotless house, I wish that maid would come.

First town to open polls...Obama by a landslide!

First town opens it's voting polls in Dixville Notch, NH., and Obama wins by a landslide! Democratic presidential candidate Barack Obama emerged victorious in the first election returns of the 2008 presidential race, winning 15 of 21 votes cast in Dixville Notch, New Hampshire.

The town, home to around 75 residents, has opened its polls shortly after midnight each election day since 1960, drawing national media attention for being the first place in the country to make its presidential preferences known.

Now get out there and vote!

Food - Halloween is over, and I must have thought it lasted all weekend, or something. I don't have any kids to "rob" from their candy bag...no need. I bought the candy, remember (my October 31st. blog.) so I could eat as much as I wanted. I ate some of the candy, but, I ate so much more than the Halloween candy. Maybe it was the Dove Ice Cream Bar, the McDonald's fries and quarter pound with cheese (total junk food day,) the home-made hamburger I made on the BBQ, the licorice. I can hardly wait until Thanksgiving!

Dish - Today is the last day we have to make up our minds on who will be the President of the USA. People are coming out in droves to vote, I believe the only other time lines to vote were this long was for JFK. Whoever you vote for, will make history. Either by being the first African American ever elected President, or the first female to ever be elected Vice President - we've come a long way! Now get out there and vote!

Girl, don't get witchy about it!

Food - I've had my share of "blonde" moments before, but I never thought it would happen with food - this one takes the candy!

No, that's what I was suppose to do. I went to the grocery store to buy Halloween candy, check, put it in the cart, check. Proceeded onto the check-out lane, check, unloaded my cart filled with chocolate, check, made idle chit-chat with the sales clerk, check, paid for my candy, check, and walked towards the bagging station - this is where it must have happened! But I really don't remember, In Oklahoma, not Arizona, what does it matter (I just can't stop myself), what does it matter? I walk out the door.

I stop at another grocery store, and of course, a stop for my daily coffee run. Fully charged, I proceed home to unload my groceries....only to find, the candy is missing! (I love candy, but I swear I did not eat it on the trip home.) I run back out to my car in hopes that I had just forgotten to grab it out of the back seat, nope, it is no where to be found. I wait patiently, as if it will magically appear (the longer you stare the better the chance it will show up don't-cha know,) it is Halloween after all, and I do believe in magic. Still no candy.

With the "Trick or Treaters" soon to be ghoulishly making their way to our haunted home, I am left with only one option - go back to the grocery store - without being too witchy about it, and ghastly admit my ghostly mistake to the store clerk. To which she said: "I love your blonde-bimbo costume, it suits you well." (Who says, Blondes have more fun?)

These blonde moments don't come "naturally", I pay dearly for them. Either I need a raise, or I am going back to my natural hair color of: yuk. Luckily, I was able to navigate my way home and hand out the candy. Oh, what a night!
