Cranberry Sausage Pecan Stuffing
Ingredients:
1 1/2 lb pound sweet Italian sausage (to spice it up, use hot)
4 tbls unsalted butter
2 1/2 c. boiling water
2 c. dried cranberries
2 ribs of celery, finely chopped
1 lg onion, chopped
One 1lb. bag herb stuffing mix
One 1lb. bag corn bread stuffing mix
2 cloves garlic, finely chopped
1/2 c. flat-leaf parsley leaves, chopped.
1 cup toasted pecan pieces
2 lg. eggs
4 c. chicken broth
1 tsp sea salt
1 tsp freshly found pepper
1 1/2 tsp sage
In a medium bowl, pour the boiling water over the cranberries and let soak for 30 minutes. Preheat oven to 350.
In a large skillet, melt butter over medium heat. Add sausage, stir to chop up sausage, add celery, garlic, sage, salt, pepper and onions; cook until vegetables are tender and meat is browned, about 8-10 minutes. Remove from heat and transfer to a bowl; let cool.
In a large bowl combine the stuffing mixes with the parsley, pecans, cranberries and the water they were soaked in. In a med. bowl, beat the eggs with the chicken broth and pour over the stuffing mixture; stir. Add meat mixture and stir thoroughly. Spoon the completed stuffing into 2 greased medium casserole dishes; cover and bake for approx. 40 minutes.

That, my friend, is no understatement. He is right - we do. But, I truly believe he is ready, and well suited, for the job. Plus, it can't get much worse, it can only get better, right? He will no doubt surround himself with the proper people to help him do just that; one needs to look no further for validity than to who he chose for his partner in life, his wife, Michelle Obama.
A couple things became evident from watching this episode of 60 Minutes. One: Michelle Obama is a force to be reckoned with, she will no doubt be his closest advisor. Although she has stated on many occasions that her main focus will lie in the rearing of their children, make no mistake about it she is the driving force behind this machine. Two: Barack Obama respects women! The love and kindness he shows towards his wife and his two daughters resonates to the equality we strive to gain in this country. Plus he seems to have a great sense of humor something I, myself, admire in a man.
They will make a wonderful "First Family!"

This is not the "sign of change" we want to see? People being called "racist bigot".... is it just more of the same? I am in no way defending Glenn Beck because we all know he can be a little over the top, like most of the commentators are, but I don't think we need to resort to hateful comments either. I think the change our country needs, needs to start with: US, the American People.
