T.G.I.F.

Food - "They" say you should eat breakfast; that it is the most important meal of the day. While I don't disagree with that statement, I have always preached it to my children (do as I say, not as I do,) I have never been one to "eat" breakfast. I am usually not hungry right away, I have to work up an appetite. Plus, I need my java first thing in the morning. After my morning jolt, then I can eat, but it has to be something light; fresh fruit with yogurt or yogurt and granola, otherwise I will fall asleep! That's why like to have "breakfast" for dinner. Here is a great recipe for French toast.

Corn Flake Crusted French Toast
Ingredients:
1 loaf brioche bread (about 1 lb)
1/3 c half and half
2 tsp. Sugar1 tsp ground cinnamon
1/4 tsp fine salt
1/4 tsp orange zest
4 eggs, lightly beaten
2 cups corn flakes, coarsely crushed
6 tbsp unsalted butter
Confectioners' sugar
Maple syrup

Slice brioche loaf into 1"-thick slices with a serrated knife. Using a 3" round cookie cutter, cut each slice into a circle and set aside. (Reserve bread scraps for bread crumbs.)
In a shallow dish, whisk together half and half, sugar cinnamon, salt, orange zest, and eggs. Put corn flakes into another shallow dish.
Working 1 circle of brioche at a time, dip in the egg mixture, allowing brioche to soak for 10 seconds on each side, then coat in the corn flakes. Transfer to a sheet tray lined with waxed paper.
Heat ( 3 tbsp of the butter in a 10" non stick skillet over medium until just foaming. Transfer 4 slices of brioche to the pan and cook, turning once, until both sides are golden brown, about 4 minutes.
Divide the french toast between 2 serving plates. Wipe out skillet, add remaining butter, and repeat process. Dust the french toast with confectioners' sugar and drizzle with maple syrup. Serve with berries and sliced fruit, if you like.

After hearing her speak you are amazed that someone who is that soft spoken could possibly run a multi-million, maybe billion, dollar company. She is soft spoken, yet fiercly focused to lead. Not just lead, she wants to lead with purpose of the greater good. It was an honor to hear her speak and it restored my faith in business'.

Embellish - Never doubt that a small group of thoughtful, committed citizens can change the world. Indeed, it's the only thing that ever has.
