Easter dinner....

Food - The "normal" Easter dinner at our home, and many others in the great state of MN, has always been centered around ham. Ham used to be the main focus, but over the course of time has shifted to and egg bake & ham.

However, some people do venture away from the ham and choose lamb. That's what a friend of mine served. She complimented the lamb with an Orzo salad; she brought a sample over for me to taste, and I must say, it was yummy!

Orzo Salad
1 lb. Orzo (Barillo)
8 0z plain feta cheese
1 cup currants
20 cornichons (french dill pickle)
1/2 cup chopped flat leaf Italian parsley

Dressing ingredients:
3/4 cup olive oil
juice of 1 very juicy lemon or two if needed
salt and pepper to taste

Cook 6-7 minutes in very salty water (about 1/2 handful of salt.) Drain and put in a bowl. Stir in remaining ingredients. Make dressing and add to the salad mixture.

* This salad is better if made 1 day before and served at room temp.

Dish - If you are lucky enough to get a return from Uncle Sam, you are probally in need of help on what to do with all that CASH. The average return is $2,700.00; and Uncle Sam is on the cover of Newsweek exclaming: "I want you to start spending your money!" Easy for him to say.
